Idiazábal unpasteurized sheep cheese 3kg wheel 12 month cure

Idiazábal is an UNPASTEURIZED hand made cheese from the milk of Latxa sheep, from Navarre. Idiazábal is an interesting alternative to the more well known Manchego. Its flavour is complex and rich, with light nutty taste.

Suggestions: Serve with fruit, quince paste or melted over rice and potatoes. It also pairs well with grilled or barbecued pork and other meats. Eat it as a snack with fresh bread or use it as a grating cheese!
