Jamón Bellota Ibérico is renowned world wide as being the highest quality meat available, made from the native Spanish breed of pig called ibérico. They are raised free range in meadows covered in oak tress and fed on tasty acorns.

On the bone jamón is happiest when stored hanging in a cool, dark place with plenty of air flow. Once sliced, the leg is kept on the cutting stand (see Accessories) with the cut face covered by breathable cotton tea-towel.
